About Oil and Grease Trap

An Oil and Grease Trap (also known as a grease interceptor or grease separator) is a plumbing device designed to intercept most fats, oils, grease (FOG), and solids from wastewater before it enters the municipal sewerage system. These traps prevent major drainage issues such as line blockages, corrosive damage to pipes, foul odours, and expensive regulatory fines.

How an Oil and Grease Trap Works

The trap operates strictly using the laws of gravity and buoyancy. [1, 2]

The Process: Greasy wastewater flows from commercial sinks into the inlet.
Separation: Baffle walls within the trap slow down the water flow, allowing it to cool.
Layering: FOG has a lower specific gravity than water, causing it to float to the surface. Food particles and heavier sediment sink to the bottom.
Discharge: The clearer, degreased water in the middle passes safely underneath the outlet baffle and into the sewer system. [1, 2, 3, 4, 6]
